Oven Fried Chicken

This is a fast, heart-healthy alternative to traditional fried chicken.
It’s spicy, crispy and easy to make.

Serves: 6

Preparation time: 10 minutes

Ingredients:

6 servings boneless skinless chicken breast (about 4oz each)

¼ Cup canola or olive oil

¼ tsp salt (optional)

freshly ground pepper to taste

1 tsp ground ginger

1 clove garlic, crushed

1 tsp paprika

3 Cups whole-wheat flake cereal, lightly crushed

 

Directions:

  1. Preheat oven to 350 degrees.
  2. Rinse chicken, pat dry.
  3. Place cereal in a pie plate or on a piece of foil.
  4. Combine oil, salt, pepper, ginger, garlic and paprika in a small bowl.
  5. Brush each piece of chicken on both sides with oil mixture, then dip in
    cereal crumbs, pressing lightly to get an even coating on all sides.
  6. Place on an un-greased baking sheet, bake for 20-45 minutes, or until
    chicken is golden brown and no longer pink in the center.  Timing will
    vary according to the thickness of the chicken pieces.
