Oven Fried Chicken
This is a fast, heart-healthy alternative to
traditional fried chicken.
It’s spicy, crispy and easy to make.
Serves: 6
Preparation time: 10 minutes
Ingredients:
6 servings boneless skinless chicken breast (about 4oz
each)
¼ Cup canola or olive oil
¼ tsp salt (optional)
freshly ground pepper to taste
1 tsp ground ginger
1 clove garlic, crushed
1 tsp paprika
3 Cups whole-wheat flake cereal, lightly crushed
Directions:
- Preheat
oven to 350 degrees.
- Rinse
chicken, pat dry.
- Place
cereal in a pie plate or on a piece of foil.
- Combine
oil, salt, pepper, ginger, garlic and paprika in a small bowl.
- Brush
each piece of chicken on both sides with oil mixture, then dip in
cereal crumbs, pressing lightly to get an even coating on all sides.
- Place
on an un-greased baking sheet, bake for 20-45 minutes, or until
chicken is golden brown and no longer pink in the center.
Timing will
vary according to the thickness of the chicken pieces.
