Love Soup

This low-fat, heart-warming soup makes a wonderful gift for a Christmas, a friend under the weather, or just to say thanks! Not only is it a great source of protein & fiber, it tastes great, too! Decorate the jar with a fabric lid and/or a bow tied around the neck. Be sure to attach the cooking instructions to the jar.

INGREDIENTS

  • 1/2 cup dry split peas
  • 1/3 cup beef bouillon granules
  • 1/4 cup pearl barley
  • 1/2 cup dry lentils
  • 1/4 cup dried onion flakes or onion soup mix
  • 2 teaspoons dried Italian seasoning
  • 1/3 cup uncooked long-grain rice
  • 2 bay leaves
  • 1/2 cup uncooked small tri-colored pasta

 

DIRECTIONS

  1. In a 1 1/2 pint jar, layer ingredients in order listed.  Wrap the pasta in plastic wrap, and place in the jar. Seal tightly.  Decorate as desired.
  2. Attach a tag to the jar with the following cooking instructions:

ADDITIONAL INGREDIENTS NEEDED: 1 pound lean ground beef or turkey, black pepper to taste, garlic to taste, 1 can (14.5oz.) diced tomatoes, un-drained, 1 can (6 oz.) tomato sauce, and 3 quarts water.

TO PREPARE SOUP: Remove pasta from top of jar, and set aside. In a large pot over medium heat, brown beef with pepper and garlic; drain excess fat. Add diced tomatoes, tomato sauce, water, and the remaining contents from the jar. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Stir in the pasta, cover, and simmer 15 to 20 minutes, or until the pasta, peas, lentils and barley are tender.  Serve with bread and a tossed green salad.
